Matcha literally means 'powdered tea' from the Camellia Sensis plant. It is a non-fermented Green tea. Preparation of Matcha involves covering the tea plants with shade cloths before harvesting. This triggers the growth of leaves with better flavor and texture. The leaves are then hand-selected and picked and steamed briefly to stop the fermentation process. These are then dried and aged in cold storage, a process that helps to deepen the flavor. The dried leaves are then stone-ground into fine Matcha powder.
