Our smooth, creamy and deliciously moreish take on traditional red cheeses comes from a family recipe perfected over decades in Ivy’s dairy. Just like our vintage Cheddar, it’s certified Carbon Neutral by The Carbon Trust and made the right way on our Somerset farm, then aged for up to 12 months to bring out its rich, nutty flavour and delightful texture.

Ivy’s Reserve is the prestige brand of Wyke Farms, a family-run operation in Somerset, England, that has been making cheese for over 150 years. Named after the family matriarch, Grandmother Ivy, this "Somerset Red" is a unique innovation in hard cheese—often described as a luxurious cross between a Red Leicester and a vintage Cheddar. It is aged for up to 12 months under wood to develop its "moreish" quality (a British term for something so pleasant you want to eat more). As the world’s first certified carbon-neutral cheese of its kind, it is produced using 100% green energy sourced from solar power and biogas generated right on the farm. The 7 oz wedge is naturally colored with annatto and features a firm yet creamy texture that pairs exceptionally well with rustic sourdough, orchard fruits, or a dry Somerset cider.
