Our outstanding cheese is the world’s first carbon-neutral Cheddar, made the old way with 100% Green Energy. On our family farm in the English county of Somerset, the home of Cheddar, we follow the recipe perfected by our grandmother Ivy almost a century ago, selecting and ageing our Cheddar for up to 18 months under wood until it takes on a very particular creaminess, complexity of flavour and nutty, rounded finish.
